I am curently restoring a 1956 F100. And need to narrow my differential, would any regular automotive machine shop be able to attack this project?

A real automotive machine shop, not Not Autozone or Kragen, etc. Maybe, depends on which shop. ask them if they narrow rearends. Better yet why not contact a specialist like Moser, Currie, and there's plenty more from here.
